Paso Robles is California's most rapidly evolving wine region, and the westside — the cooler, hillier half of the AVA centred on Adelaida District and Templeton Gap — is where its quality reputation has been built. Start your day at Tablas Creek Vineyard, the most influential estate in Paso Robles. Founded in 1989 as a joint venture between the Perrin family of Château de Beaucastel (Châteauneuf-du-Pape) and importer Robert Haas, Tablas Creek imported certified vine cuttings directly from Beaucastel and propagates them at the on-site nursery — supplying nearly every Rhône-varietal winery in California with cuttings. The wines are made in faithful Châteauneuf style: white and red blends led by Mourvèdre, with the flagship Esprit de Tablas a benchmark American Rhône.
